Gluten and sugarfree Plum Cake

Plum seasON! I already prepared some jam, and now I bring you a super easy autumn plum cake recipe. Yummy! I like it so much! Plum is also very healthy, it improves the immune system, has a beneficial effect on the cardiovascular system and gently, yet effectively purify the body. It is rich in vitamins and contains antioxidants. And how to prepare a sugar and gluten free plum cake? Now I will show you one of my favorite recipe.

 

Ingredients:

  • 115 g softened butter
  • 100 g xilit or eritritol
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 145 g almond flour
  • 55 g coconut flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • Pinch of salt
  • 1/4 teaspoon almond extract
  • 180 ml almond milk
  • 5-6 seeded plum

 

Preheat oven to 180 degrees Celsius. In a bowl mix the butter with the sugar substitute until smooth than add the eggs one by one. Finally add the almond and vanilla extract and mix it again well.

In another bowl mix the two types of flour, baking powder, cinnamon and salt. Now add the butter cream to the flours and mix the whole dough together. At the end add the milk to the mixture and blend it gently until you get a smooth dough.

Pour the dough into a pan covered with parchment paper or buttered and place the pitted plums to the top of your cake. Bake it for about 30 minutes.
